Elephant Ears

I was going through my Taste of Home cookbook yesterday afternoon and I ran across this recipe for Elephant Ears. I read through the recipe real fast to see if I had all the ingredients. I did! Let me just say this, I haven't had Elephant Ears in a long time. A few years ago, while camping at grandma Sparrowes, cousin Jodi brought me one from the fair in Ohio. Before that moment I haven't had an Elephant Ear for like 12 years or so.
I decided to make these for dinner b/c the lady that submitted the recipe suggested they make quite an impression on the breakfast table. Yes, we had breakfast for dinner and it's a family tradition every Thursday night. The dough took longer to rise than expected but turned out great just the same. Now, if you don't want to make 15 I recommend cutting the recipe in half. Enjoy a taste of the fair right at home.

Here's the whole recipe.

Elephant Ears
1 Pkg (1/4oz) acitive dry yeast
1 cup warm water (110*-115*)
1 cup warm milk (110*-115*)
3 Tbsp sugar
1 Tbsp salt (I used 1/2 Tbsp)
4-4 1/2 cups all-purpose flour








Oil for deep-fat frying



Topping: Mix together
1 cup sugar
1 tsp ground cinnamon

OR

Powder sugar (my favorite)



Dissolve yeast in water. Add milk, sugar, salt, shortening and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until dobuled, about 1 hour. Punch down and shape in 15 ovals, 5-1/2 in. round by 1/8 in. thick. Heat 3-4 in. of oil to 375* in deep-fat fryer. Fry ovals, ane at a time, for 3 min. per side or until golden brown. Drain. Sprinkle cinnamon/sugar or powder sugar over warm pastries. Yield 15 servings.
